From Freezer Meal Skeptic to Believer
To be honest, I was a freezer meal skeptic. I like to prepare and cook meals from scratch right from the fridge, and associated freezers meals with squishy overcooked vegetables, bland meat, and full of pasta and creamy sauces. I couldn’t have been more wrong. With two active preschoolers and a busy schedule, freezer cooking has been a life saver and From Freezer to Table has opened my eyes to the vast array of food items that can be prepared ahead of time and pulled out of the freezer the day before (or if you’re Instant Pot cooking… 2 minutes before you throw it in the IP!) to enjoy the next day. Some of my favorites from the cookbook are Sheet Pan Lemon Garlic Chicken and veggies and the Red Pepper, Spinach, and Feta Crustless Quiche. The recipes incorporate healthy ingredients (that real people eat, I haven’t found any specialty ingredients yet), are approachable, appeal to a wide variety of tastes (everything from salmon burgers to pizza to homemade chicken broth to breakfast burritos), are easy to follow and double/quadruple, and include step by step freezing instructions. There is also a handy icons at the top of the page that indicate if the meal is suitable to bring to others (think: meal train!), if its takes 30 minutes or less, if its kid friendly, gluten free, easy to grab and go, and my favorite: sneaky nutrition. Because lets be real: Getting vegetables into kids can be a power struggle at times!Don’t get me wrong, I still love cooking a fancy meal from beginning to end, but with littles running around, I just don’t have the time to spend hours in the kitchen preparing a meal (that half the time they will refuse to eat). This book has been a life saver. I used to be a skeptic, and now am a freezer meal believer.

Meals ready to go for my family or emergencies
This was my first cookbook from these two ladies. I was so happy to get their second on as well. I started out with a freezer meal party!! So much work! I end up doing mine on my own. A lot less stress and just as many meals in the end! I usually triple recipes and it gives me two large meals. One for tonight and one to freeze. We always have leftovers for lunches. We have made many recipes and have come up with a winner every time. I have both of their cook books and are my go-toâs. I freeze many meals in round tubs, then I un-mold and vacuum seal, back to the freezer. Itâs the perfect shape for the instant pot. Iâve pretty much ditched the slow cooker.I usually make two types of meals at a time, each one tripled. So Iâm in the kitchen for about an hour or so, but I have four huge meals. So on days Iâm to tired, lazy, etc…Iâm good to go with about 15 minutes and an instant pot and a salad on the side.Also, I have meals in the freezer that I have been able to share with friends who were ill, a family who had a fire, someone who had surgery. It was so nice to be able to just pull and go.

Beautiful, healthy and practical!
I have enjoyed reading Polly & Rachel’s blog for awhile now, and was thrilled when they approached their readers about joining their launch team to help test some of their recipes in preparation for their new cookbook. I tried several of the recipes and my family enjoyed them all.Now that I have received my cookbook and looked through it, I’m thrilled with the results! The photos (of most of the recipes) are beautifully done and the cookbook is filled with both realistic, yet healthy, mostly whole-food recipes and suggestions for freezer cooking. They have provided recipes for making many staples from scratch, but have also given the option for using store-bought, healthy alternatives when time or energy is short.There is a large section devoted to sharing their ideas for freezer cooking clubs or parties, as well as instructions for simply making extra and freezing for your own family. I have done this for years, but am still encouraged by all of the amazing-sounding recipes in this book! It’s making me want to get cooking more again!The book is laid out well and includes symbols to denote different types of recipes; even the index is thoughtfully planned to make it easy and practical to use.These women are approachable and kind as well as “real”, and I’m happy to have this new resource to liven up my mealtimes and re-stock my freezer!

I am saying “YES” to freezer meals!
I love this cookbook! Freezing casseroles wasn’t new to me, but this cookbook has certainly broadened my horizons. I have found lots of things I can make ahead and have ready on those days when there just isn’t enough time! I think this is great for families with kids still at home, but also for us as “empty-nesters” because both of us are still working full time and involved in lots of things so meal prep time needs to be minimal. Most of these recipes will feed a family of 4-6, so when I prepare one, half goes on the table that night and the other half goes in the freezer. Instead of using that 13×9 dish, it goes in two 8×8 pans. Typically I’m keeping 5-6 meals in my freezer on a regular basis now and when our kids are coming back home with the grandkids I stock up the freezer in advance so we have more time to spend doing fun things together and less time cooking and cleaning up the kitchen. But even more importantly I can say that I have yet to prepare a recipe from this book that isn’t delicious! The instructions are great – very detailed and understandable. Polly and Rachel hit a home run with this one as far as I’m concerned!

Great, Easy to follow start to finish
I have been wanting to start Freezer meal preparation for a long time. But the whole thing seems so complex. This book takes you from preparing to serving, and is written in such a way that it will help you get the job done. The simple instructions cover not just the recipes but also basic recommendations on how to freeze each dish for maximum quality and best of all basic instructions for how to prepare the frozen meal for maximum quality. Oh and which ones to cook prior to freezing and which to cook before serving. The concept of freezer clubs is great, Iâm thinking maybe a family based freezer club with cousins, aunts, uncles, brothers and sisters. My only wish item would be a picture of each recipe and a conversion for metric.
